Oven roasted chestnuts may be one of the easiest recipes on my blog. Dare I say, not just easy, but mouth-wateringly good. This recipe is from Carol Gelles' 1,000 Vegetarian Recipes, past winner of the Julia Child Cookbook Awards. The Good News--How often do you see 1,000 recipes in one book? Hardly ever. It's a great buy.

Getting back to chestnuts...

I like chestnuts served with almond milk, sweet bread, or as a midday snack. As far as recipes go, chestnuts are versatile. Think outside the box. They're a meaty nut. Some would say an acquired taste. Some say they taste like mashed potatoes, others say sweet potatoes. Others don't agree with either. I suspect they may taste different to everyone.

I am all for chestnuts. Maybe I like them because they remind me of holidays and family. And they smell like winter on fire.

Roasted Chestnuts Recipe

Ingredients
  • Chestnuts
Preparation
  1. Preheat oven to 350° F.
  2. Use a small sharp knife to cut an "X" in the top of each chestnut.
  3. Place the chestnuts in a baking dish, single layer.
  4. If the chestnuts are small, bake in the oven for 30 minutes. Larger chestnuts should bake for 45 minutes.
