Ginger-Cantaloupe Soup

Ingredients
  • Four cups cut-up cantaloupe
  • 1 cup orange juice
  • 1 tablespoon fresh minced ginger, or 1/2 teaspoon ground ginger
Preparation
  • Bring the cantaloupe, orange juice, and ginger to a boil over medium-high heat, in a 2-quart saucepan.
  • Reduce heat and simmer 5 minutes.
  • In a blender or food processor container fitted with a steel blade, blend mixture until smooth.
  • Chill.
