Egg drop soup, also known as egg flower soup, is a delectably simple soup consisting of only eggs, chicken broth, and a topping of scallions or chives.

Egg Drop Soup

  • 4 cups fat-free, less-sodium chicken broth
  • 2 large eggs, lightly beaten
  • 3 tablespoons chopped green onions
  • 1/4 teaspoon salt 

1) Place broth in a medium saucepan and bring to a boil.

2) Reduce heat to low, and place a wire mesh sieve over saucepan. Strain eggs through sieve into pan.

3) Remove from heat. Stir in onions and salt.
