Chicken Skillet Cobbler


Ingredients
  • 1 pound boneless, skinless chicken breasts, cut into bite-size pieces
  • 2 (12-ounce) jars fat-free chicken gravy
  • 1 (16-ounce) package frozen mixed vegetables
  • 1 cup frozen chopped onion or 1 medium onion, chopped
  • 1 1/2 cups pancake mix
  • 3/4 cup fat-free reduced-sodium chicken or beef broth
Preparation
  1. Spray a 12-inch nonstick skillet with nonfat cooking spray.
  2. Saute the chicken in the skillet over high heat until  it is cooked through.
  3. Add the gravy, mixed vegetables, and onion. Stir until well mixed.
  4. Bring the chicken mixture to a boil, and cook for 2 minutes.
  5. Combine the pancake mix and broth in a bowl, stirring to make a thick batter.
  6. Spread the batter over the boiling gravy. Don't worry, the batter will spread to cover the gravy as it cooks.
  7. Reduce the heat to a low boil.
  8. Cover the skillet and cook for 5 to 7 minutes, or until the batter is fully cooked.
