This recipe brings chocolate and vanilla together in a way that is, unfortunately, so delicious that it's impossible to stop at one cookie. So go ahead and eat two. Really. Each cookie is only 43 calories!

 Chocolate Pinwheel Cookies

Ingredients
  • ¼ cup margarine, softened
  • ¼  cup sugar
  • ⅓ cup vanilla low-fat yogurt
  • 1 egg
  • 2 teaspoons vanilla extract
  • 2 cups plus 2 tablespoons all-purpose flour
  • ½  (8-ounce) package Neufchâtel cheese, softened
  • 1 (1-ounce) square semisweet chocolate, melted
  • 2 tablespoons plus 1 teaspoon powdered sugar
Preparation
  1. Cream margarine; gradually add sugar, beating at medium speed on an electric mixer until light and fluffy.
  2. Add yogurt, egg, and vanilla; beat well.
  3. Stir in flour; shape dough into a flat disc, and chill thoroughly.
  4. Roll dough to ⅛-inch thickness on a lightly floured surface. Cut into 1-inch squares. Cut each square diagonally from the corners to the center, leaving a ½-inch portion of dough in center uncut.
  5. Combine cheese, chocolate, and powdered sugar in a small bowl, beating at low speed of an electric mixer until well blended. 
  6. Spoon to heaping ¼ teaspoon chocolate mixture onto center of each square.
  7. Fold every other point of cut corners to the center to form a pinwheel. Press firmly to seal seam of point.
  8. Place pinwheels on ungreased cookie sheets; bake at 375° for 10 to 12 minutes or until lightly browned.
  9. Cool on wire racks.
  10. Enjoy lightly.
