Diet Plateau Crushing Muffin Recipe

Serving size: 4 muffins
Per Serving: Calories: 271 Carbohydrates: 35 Fiber: 6.6 Protein: 15

The nutrition facts are for the basic recipe without any optional extras. The cinnamon and nutmeg do not add calories, if used.


Dry:
½ cup old-fashioned oats -gluten free
2 tsp coconut flour
¼ tsp baking powder
2 T. Swerve sweetener (or pourable Splenda)

Wet:
¼ tsp vanilla extract
½ almond milk, unsweetened
1 egg

Optional extras:
-1½ T. peanut butter with 1½ T extra dark chocolate chips.
- A pinch each of cinnamon and nutmeg.
- 1 T. chopped walnuts with 1 T. chopped dried fruit.
