Laura Hickman's Baking Outside The Box is a phenomenal source for low-carb diet recipes, and this plateau crushing Breakfast Muffin recipe is one tasty example of what you'll find on her blog. Old fashion oats, vanilla extract, almond milk, and coconut flour blend into stomach-filling deliciousness at only 271 calories.
The excerpt below is selected from Laura's Low Carb recipe archive, where you'll find a variety of choices such as Low Carb Personal Pizza, Low Carb Pancakes for 1 & Zero Carb Golden Pancake Syrup, and Hot Sriracha Slaw Recipe. My personal favorite is Crazy Low Carb Fudge Recipe made with a little secret ingredient called Velveeta.
You'll also want to check out her BOTB (Baking Outside The Box) Recipes, which start with a basic mix called the Goody Mix. This is such a fun method of baking, not to mention fast and frugal.
