Slow Cooker: Cabbage Soup

This is a thick and hearty cabbage soup that is super simple to put together. This soup far exceeded my expectations in both taste and appearance. I was expecting to see a few shreds of cabbage and carrots floating in an abysmal sea of broth, but this recipe is not like that at all. Equally wonderful is the fact that it took mere minutes to shred the cabbage, chop the vegetables, and throw it together in the slow cooker.

Colleen Heatwole of Burton, Michigan contributed this recipe to Fix-It and Forget-It Lightly. In this cookbook, there are seven variations of the cabbage soup recipe to choose from, but I kept coming back to "Diet" Soup-Cabbage Soup. It is the only one that creates its own broth as it cooks. Really cool. If you have been disappointed by cabbage soup before, give this recipe a try. I think it will change your view.

(Ideal slow cooker size: 5- or 6-quart)

Diet Cabbage Soup

Ingredients
  • 1 head cabbage, sliced thin
  • 3 onions, chopped
  • 2 lbs. tomatoes, chopped
  • 1 medium-sized carrot, thinly sliced
  • 1 red or yellow bell pepper, chopped
  • 2 cups low-sodium chicken bouillon
  • 1 pkg. dry onion soup mix 
Preparation
1) Combine all ingredients in a slow cooker.

2) Cover. Cook on high 4 hours or low 6-8 hours.
Done! It's that easy and so delicious!
